Margherita Pizza





Yum Yum Gimme Some! That's all that comes to mind. Perhaps because it's just that good. Or maybe it's because I'm deliriously tired?!? Let's just say a combination of the two for arguements sake. Today was a "karate" day for my son. So that means quick dinner. Can I just tell you that I'm not a fan of rapid rise yeast? I have tried it time and time again. It just doesn't work for me. I tried it because of the lack of time that I had to prepare dinner tonight. I would give you the recipe but......if it didn't work for me.......it isn't gonna work for you! So I'll suggest a homemade pizza dough recipe you can use, or buy some. I won't tell :)


2 large Fresh tomatoes, thinly sliced,  or 1 cup of canned crushed tomatoes
fresh Mozzarella, cut into thin rounds
fresh Basil
Sea Salt
Good olive oil Pizza Dough (either buy your own, or use Giada's found here http://www.mydeleriouskitchen.com/recipesfromothers.htm)
Standard Size Pizza Pan

Preheat oven to 400
Roll out your pizza dough, brush with olive oil, top with fresh tomatoes, salt, handful of chopped basil, then mozzarella (about 5 slices should do). Bake for 15 to 20 minutes, or until golden brown and cheese is bubbly. Let cool for about 5 to 8 minutes.  Top with more fresh Basil and serve.
