Veggie Frittata


I am really dragging along today. Four hours of sleep and a super long but, very fun weekend! Something healthy and light to get this day going.


4 eggs
1/2 cup broccoli, chopped
1/2 cup cauliflower, chopped
1/4 cup onion, chopped
1 teaspoon paprika
1/4 teaspoon sea salt
2 tablespoons fresh parsley, chopped
1/4 cup cheddar, asiago, montery jack blend (or just cheddar is fine)


In a bowl crack two eggs. Then crack two more eggs reserving just the egg whites and discarding the yolks.  Whisk well, stir in salt, parsley and paprika. In an ovenproof, nonstick pan heat a teaspoon of olive oil and add onion, broccoli and cauliflower. Cook until just tender.  Pour in in the egg mixture over the veggies. Reduce the heat, cover and cook until edges start coming away from the pan but still partly liquid in the center;add in cheese.  Preheat broiler and place the pan uncovered for 2 minutes or until it's set and golden brown. Do not over cook or you will have tough as nails eggs!
I love taking photo's outdoors! For some reason I can't seem to find a good area in my condo with good lighting. I try to be very particular when taking pictures. Everything has to be just so! Here is another picture that I didn't want to post because the frittata wasn't perfectly centered in the plate! I know, I know.......I have issues............
You see! Too far over to the right side haha! I'm going against the grain here posting a picture I'm not overly fond of! Breaking out of my obsessive tendencies :) Enjoy!
