So it was a busy Thursday for me. I had a ton to do & didn't want to take a ton of time on lunch. I had some left over Spinach in my fridge & of course I keep individually wrapped Salmon on hand in the freezer as well! I am all about 1 pot wonders for sure! Those night where you are driving the kids all over the place. Or even for a single person rushing to get out the door. This meal is perfect for just that. Did I mention it's pretty healthy too! Packed with vitamin A & tons of flavor.
1 Salmon Fillet (about 6 to 7 oz)
1/2 cup frozen spinach, thawed & drained
1/4 cup Fat Free Italian Dressing ( I used Kens )
handful tomatoes (cherry tomatoes, plum or even large will do just chop them up a bit)
handful of fresh mushrooms
Extra virgin olive oil
salt/pepper to taste
In a large bowl mix the spinach, tomatoes, mushrooms, salt and pepper together. Pour in the Italian dressing and give it another good mix. Heat the oil in a large skillet, add the salmon and fill up the sides with the spinach mixture. Cover and let slow cook on medium heat! It's just that easy! You could even pop this in the oven. I would preheat it to 350 cover and let it cook about 15 minutes. Tons of great flavor, fast and good for you. Enjoy!
