
Another recipe by request! I was asked to come up with a meat pie. Who doesn't like Tacos?! This is so incredibly easy to make too. Fridays are usually my days off from cooking. However I really didn't have anything else to do. So I thought about what I had & this is what I came up with........
1 pound ground beef
1/2 cup recaito (homemade or store bought Goya)
1/2 cup salsa (store bought or homemade, you decide how spicy)
1 teaspoon cumin
1 teaspoon cayenne pepper (optional)
1 teaspoon chile powder
salt/pepper to taste
3/4 cup Shredded Mexican cheese blend
1 pie shell (homemade or store bought, yes you can cheat I won't tell)
Preheat oven to 400
Poke holes in the bottom of the pie shell with a fork. Put the pie shell in for 11 to 14 minutes. Let the pie shell cool. Yes that's right I cheated.
Ok now onto the beef, grab a skillet and heat up a couple tablespoons of extra virgin olive oil. Next add in the recaito, beef, chilie powder, cumin, cayenne pepper, salt/pepper. Stir the beef constantly while breaking up the meat until fully cooked. Finally fold in the salsa, drain and fill your pie shell. Top with cheese making sure to cover all the beef. Add more if needed......if we're going to cheat we might as well do a good job of it right?! Bake for 10 to 15 minutes or until the cheese is melted and bubbly.
I served mine with lettuce and tomatoes. You can add in beans to this pie, corn anything you enjoy in a taco feel free to pile into this pie. You can also use fresh onions, garlic and cilantro instead of the store bought Recaito. My family doesn't like the chunks so Recaito is just a different way to pack in the flavor.
