Salmon Pasta Salad










2 cups pasta, cooked (any short style pasta will do)
6 oz. Salmon, cooked and chopped
1/4 cup onion, chopped
1 clove garlic, minced
handful capers
1 celery stalk, chopped
handful fresh parsley
4 oz feta cheese


In a bowl add the cooked pasta;pour in a tablespoon of  good extra virgin olive oil and toss.   Saute the onion and garlic with salt and pepper to taste, add in the celery and salmon and just warm through.  Add the salmon mixture to the pasta and top with parsley, capers and cheese. Give it a good toss and serve warm or put it in the fridge to chill and serve as a cold salad. This can be served  as a main course for lunch or dinner, or even a side dish. So easy and so good! Enjoy.
