2 8 oz White Fish Fillets of any kind (I used Tilapia)
1/2 teaspoon sea salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1 teaspoon basil
Lemon (optional)
1 roma tomato, sliced
Preheat oven to 400
Lay fish out on a cookie sheet. Mix all spices together in a bowl. Using half the spice mixture, sprinkle on one side of each fish fillet. Flip the fish over and sprinkle remaining seasoning on the other side. Drizzle with olive oil, add a couple slices of tomatoes on each fillet, drizzle with a little more olive oil. Bake for about 15 to 20 minutes. Serve with lemon (optional).
I served mine with roasted asparagus and low fat cornbread. Side salad and or pasta would be a good as well.
