
This was the first dish I made when I came home from vacation. I saw some mouth watering seafood recipes from Peter Francis Battaglia! Check him out, you will not be disappointed that I can promise you! So I did what any sane person would do! I high tailed it to my local market and scanned over the available seafood. I really wanted little neck clams but they were all out already. So I bought some Mahi Mahi (which you will see soon enough) and some shrimp. I had red potatoes and onions at home. I saw corn on the cob on sale so I grabbed a few ears and some sausage as well. Shrimp Boil! This meal isn't just great as a manly man dish, but honestly? For the entire family. Great for parties and large gatherings.
I made just enough for a couple of people. By all means double and triple this recipe to suit your needs.
1 quart of water
2 ears fresh corn, cut in half
1 pound unpeeled jumbo shrimp
1/2 pound sausage
1 onion
3 cloves of garlic
handful of red potatoes (if they are large three or four will do, if they are small grab a handful)
salt (salt the water as if you would pasta)
bay leaf
Bring the water to a boil in a large pot. Add in the old bay seasoning, salt and bay leaf. Once the water is at a boil add in the onion, garlic and potatoes; cook 8 minutes. Add the sausage and cook five minutes. Add corn and cook another 8 minutes. Add in the shrimp and cook until pink about 5 minutes. Drain (reserve juice for dipping bread if desired) Sprinkle more old bay seasoning if desired and serve.
