Shrimp Stuffed Mushrooms


One package of Button Mushrooms
8 large shrimp
1/2 cup grated cheese (Asiago, pecorino, parm.)
3/4 cup panko bread crumbs
salt/pepper to taste
one sprig of rosemary
1 egg
8 ounces mascarpone cheese
olive oil
1 tablespoon of parsley
one rind of a lemon

Remove stems from mushrooms.  Mix half cup of the cheese, panko, mascarpone, egg, salt/pepper to taste and parsley.  Cut shrimp into very small pieces and mix it w/the remainder of the cheese.  Spoon shrimp mixture into the mushrooms and top w/the panko mixture.  Bake at 375 for 20 minutes. Grate a little lemon peel on top and to garnish with a sliver of lemon peel.  Serve warm.
