One large eggplant
1 egg beaten w/ 2 tablespoons of milk
1 cup flour
2 cups of bread plain bread crumbs
1/2 cup grated parmesan or pecorino romano
salt/pepper to taste
one package shredded mozzarella
Heat oven to 350
Cut eggplant into 1/2 inch strips. Salt real well and set in a colander for about half hour. Rinse and dry well.
Beat egg and milk to make a wash in a bowl for dipping. In another bowl add the flour. In another dipping bowl add in bread crumbs, spices, and grated cheese.
Dip eggplant in flour, then egg drenching well, then bread crumbs coating them well. Place on wire rack to dry out a bit. Repeat process for entire eggplant. In large skillet fry eggplant on both sides until light golden brown. Not necessary cooked all the way through. It will finish cooking in the oven.
In a large shallow baking dish put down a layer of marinara, then a layer of eggplant, another layer of gravy, then shredded mozza. repeat layers until the last two top layers are gravy and topped with shredded mozza. Bake @ 350 for 20 minutes. Serve hot, garnish w/parsley. Pasta and salad are great side dishes w/a loaf of garlic bread! Makes about five servings.
