2 28 oz. Cans of San Marzano Tomatoes (whole and peeled, any brand will do)
1/2 cup Mexican Cheese blend
1/2 chopped red onion
1 tablespoon dried cilantro
a good bunch of fresh chopped cilantro, about 2 to 3 tablespoons
2 cloves of garlic
salt and pepper to taste
3/4 cup of Lime flavored Vodka
juice of 1/2 a lime
1 cup of heavy cream
Saute onions and garlic in a big sauce pot with olive oil. Once translucent add in salt and pepper. Next add in the tomatoes, roughly chopped with the juices. Add in fresh and dried cilantro and simmer for an hour with the cover on. Once desired thickness add in the vodka and simmer about 20 minutes. Add in the heavy cream and heat through. Finally stir in the cheese until mixed well. Right before serving squeeze in lime juice, stir and plate.
