Tomato-Basil Tart with Cracker Crust
Every once in a while I will ask you guys on Salvo-lutions Facebook fan page what kind of recipes you would like. Well I did just that. It's been brought to my attention that I don't have many vegetarian dishes. At first I thought to make a summer tomato soup. But of course that's too easy. I want to think a bit outside the box. So I decided on a tomato tart.
I really didn't feel like making an elaborate crust. And honestly? I was still in my pajamas and the store wasn't an option either lol. I searched my kitchen for something easy to use. Eureka! I found two boxes of Keebler Club Crackers. So this is what I did...
2-3 large roma tomatoes, sliced
Handful fresh basil, sliced into ribbons
1 teaspoon garlic powder
1 teaspoon basil flakes
1 1/2 cups crackers (your choice, you can use low-sodium to control your salt intake)
Mozarella cheese
4 tablespoons melted butter
Preheat oven to 375
In a food processor, or blender crush the crackers until they are very fine. In a large bowl combine, the basil, garlic powder, and four tablespoons melted butter. Mix well until all the crackers are moist. Press into a 9 inch pie plate, or if you have a tart plate even better. Bake for about 10 minutes or until light golden brown. It's very important to let it cool completely.
Next, layer the mozzarella cheese onto the pie crust. You can use as much as your heart desires. Just make sure it at least covers the bottom of the crust completely. Layer the cheese with the sliced tomatoes. It's fine if they overlap each other. Drizzle with extra virgin olive oil and salt and pepper. Bake for about 20 minutes. Top with fresh basil ribbons, cool slightly, cut, serve and enjoy!
You can absolutely use filo dough or prepared crust for this instead of crackers.
