Lime-Honey Grilled Chicken Salad



I LOVE citrus. Lime is probably my favorite. I love lemon, oranges, grapefruit, you name it. However not everyone does, and lately people have been asking..."what can I use in replace of lime".  Well my whole motto is use what you enjoy. With this recipe I used lime juice. You can use any citrus you'd like! You can use a splash of orange juice, pineapple juice, whatever you want. That is the fun of cooking.


2 boneless skinless chicken breast
Juice of 1 lime
2 tablespoon extra virgin olive oil
2 teaspoon honey
1/4 cup fresh cilantro, chopped
1 teaspoon cumin
S/P to taste
Romaine Lettuce
Red Bell Pepper
Red Onion
Avocado
Tomatoes

In a bowl, whisk the lime juice, olive oil, honey, cilantro, cumin, salt and pepper. Toss in the chicken making sure to coat each side. Cover and pop in the fridge until you are ready to use it.

Now this part is completely up to personal preference. Slice up the red pepper, red onion, avocado and tomato. Don't like something? Don't use it. I use red onion because it's the healthiest onion for you. I also really love red bell peppers.  Avocados have that good fat we need. Clean the lettuce, dry it, break it up and place them on four plates.

Heat the grill to medium hot. Grill the chicken for about 10-12 minutes or until the juices run clear.

Top your salad with the grilled chicken, and vegetables of your choice. Garnish with lime (optional).

You can also use this marinade as a dressing. Do not use any marinade after the chicken has soaked in. It may contain bacteria that can cause you to become very ill.

After the entire salad has been plated, I used a drizzle of olive oil, splash of lime juice, salt and pepper. It really brings out the flavor of the avocados.
