Tomato, Broccoli & Bacon Rotini

half box of rotini pasta (whole grain or regular)
1 box of low sodium chicken broth
Half cup of chopped Broccoli
One tomato chopped
2 cloves of garlic
one sprig of oregano 
1 tablespoon fresh chopped parsley
salt/pepper to taste
5 to 6 pieces of Turkey Bacon (optional) or you can use "real "bacon
1/2 cup freshly grated locatelli cheese.


Cook bacon in a large skillet.  Take out and reserve for later use.  In the meantime pour chicken broth in a saucepan and bring to a boil.  Cook pasta as directed on box.  Reserve about 3/4 cup of the broth when draining.   Saute broccoli, oregano, salt/pepper, and parsley in the same skillet you cooked the bacon in. Add olive oil if needed. Cook stirring for about five minutes.  Add in the tomatoes and reserved chicken broth cook another 3 to 4 minutes.  Add in the pasta and mix real well in skillet.  Add in the cheese, serve and top with crumbled bacon.
