Chocolate Tiramisu
Chocolate heaven on a plate right there. Tiramisu - "Pick me Up". Typically made with Lady Finger cookies, however I forgot them at the store! No worries, graham crackers can be used! Try it now and thank me later!
8 oz. Mascarpone Cheese
1 Tablespoon Good Quality Unsweetened Dutch Cocoa Powder, plus extra for dusting
1/2 Cup Good Strong Italian Coffee/Espresso
1 Package of Graham Crackers (because I didn't have lady fingers)
3 Egg Yolks
2 1/2 Tablespoons Sugar, divided
1 Teaspoon Dark Rum or Frangelico
Bittersweet Chocolate to shave over top
Beat the egg yolks and sugar until pale yellow. Add in the mascarpone, tablespoon of cocoa powder and 2 tablespoons of sugar. Mix until smooth and set aside.
Line your baking dish with graham crackers. Mix together the rum and coffee. Brush on the liquid mixture onto the graham crackers. Spoon half of the mascarpon mixture onto the graham crackers. Repeat another layer of graham crackers, brush with liquid, spread on rest of mascarpone mixture. Mix together remaining 1/2 tablespoon of sugar w/a little cocoa powder. Dust over the top of the Tiramisu, shave bits of chocolate (optional) and pop in the fridge for at least one hour.
Note * This does contain raw eggs. It's best to use fresh, properly refrigerated eggs.
