Chicken Cacciatore


A Classic Italian dish. Very affordable, you can feed an army on this. Tons of flavor, easy to make, you just can't go wrong. If you haven't already, give it a try! There are so many different variations of Chicken Cacciatore. This is a very basic one. You can use a whole chicken, add in mushrooms, omit the carrots.

4 Chicken Cutlets
1 Onion, chopped
5 Large Tomatoes, peeled & chopped
1 Carrot, chopped
1/2 cup low-sodium chicken stock
Fresh Parsley
S/P to taste

Heat oil & a couple tablespoons of butter in a pan. Add in the onions tomato, carrot, s/p, chicken stock, cover & cook for about 30 minutes. Next add in the chicken & cook until done. Top with fresh parsley & serve over macaroni or rice.
