Clams with Tomatoes & Zucchini



2 Dozen Clams, scrubbed
1 Shallot or 1/2 small onion, chopped finely
1 Clove Garlic, chopped finely
1 Zucchini, chopped into cubes
1 Tablespoon chopped fresh Parsley
1/2 Cup White Wine or Low-Sodium Chicken Stock
2 Tomatoes, peeled & chopped
S/P to taste

Heat olive oil in a pan, adding in the onion & garlic, cooking for about five minutes. Add in the white wine/or chicken stock, parsley, s/p, tomatoes & zucchini. Cook for about 20 minutes. During the last five minutes add in the clams & cover. Discard any clams that did not open. Serve immediately & as always Enjoy!
