Strawberry Bars
My son is home and he wanted a treat. He hasn't wanted to be in the kitchen with me in a long time! He's 9 now and is too cool for me! So I b-lined it to the kitchen with a huge smile :) I had an enormous container of fresh strawberries that I needed to finish up. He had originally asked for strawberry pie, but it was about eight o'clock at night and I was too tired to make all that. So we decided on strawberry bars. You can really use any fruit you'd like, and if you don't like lemon juice, you can always use lime.
Filling:
3 cups fresh whole Strawberries
Juice of 1 Lemon
1/2 cup sugar
2 tablespoons flour
Crust:
1 1/2 cups flour
1 1/2 cups uncooked quick cooking oatmeal
1 cup packed brown sugar
3/4 cup melted butter
1/2 teaspoon baking soda
1/3 teaspoon salt
Preheat oven to 350
Cut the stems off the strawberries, clean them well and give them a rough chop. Pour the strawberries and the lemon juice into a large pot. Cover and heat on medium for about eight minutes. Give it a good stir every so often.
In the meantime, grab a bowl and mix the sugar and flour together. Pour the mixture into the strawberries, stir real good and bring it to a boil. Continue cooking for about a minute longer until the mixture becomes nice and thick.
In a mixing bowl combine the flour, oatmeal, brown sugar, baking soda and salt. Mix until well incorporated. Pour in the melted butter, and keep mixing making sure it's nice and moist. When all the dry ingredients are wet and mixed together, reserve 1 1/2 cups and set aside. With the rest of the mixture, press into a 9x13 baking pan. This is going to be your crust.
Now pour the strawberry mixture onto the crust, spreading evenly across the top. Crumble on the reserved crust mixture over the strawberries. Bake for 35 minutes or until nice light and golden brown. Let cool, cut and serve. Refrigerate any left overs.
