Chicken-Pear and Walnut Salad
I almost feel guilty about posting this. It really isn't cooking in my eyes at all. However it's part of the "lightened up" journey I've been taking you on this week. So easy your kids can do it! A lot of people have opinions on boiling chicken. Most would say it's dry or tasteless. Well not if you do it correctly. Adding fresh herbs and boiling in fat-free, low-sodium chicken stock, it can be quite tasty! Especially if you are in a hurry. This is perfect for all you bachelors and bachelorettes out there!
1 boneless, skinless Chicken Breast
1 Bosc Pear, ripened
1/2 Red Onion, sliced
Handful Walnuts
Favorite Lettuce ( I used Romaine)
Low-Sodium, Fat-Free Chicken Stock
Sprig of Fresh Rosemary
Add the chicken stock to a small pot with the rosemary and bay leaf (optional). Add the chicken, cover and let cook. Check the chicken after about eight to ten minutes. Careful not to over cook it!
In the meantime, lay out your bed of lettuce. Top with sliced red onion and a handful of walnuts. Peel and core the pear. Slice it and lay that on top of your lettuce. When the chicken is done, cube it or shred it and lay that down on top. I used a drizzle of good extra virgin olive oil with just a sprinkle of salt and pepper and that was enough for me. However you can use a fat free dressing if desired. Maybe a Raspberry vinaigrette. Enjoy!
