Chicken w/tomatoes, onions & mushrooms


This past Monday I decided it was time to shed a few pounds. So I have been taking you on a journey with my "lightened up" food.  When I "diet" I'm not crazy about stepping on a scale and being obsessive over numbers. I don't do the cleanses for days at a time or eat strictly just "rabbit food". No, I "lighten" things up a bit.
Actually if you notice, most of my food is fairly healthy. It's homemade, I usually use fat-free and low-sodium ingredients, mostly just chicken and fish with little red meat. I'm just making it a point to really show you how to lighten things up.
You can still have very flavorful meals with less fat and sodium. I added whole wheat couscous to this dish and it was quite tasty (if I say so myself). Even my pickiest of friends wiped the plate clean!


4 skinless, boneless Chicken Breasts (I used the thin cut)
1 large Tomato, diced
2 cloves garlic, minced
3/4 cup low-fat, low-sodium chicken stock
1 small yellow onion, chopped finely
1 sprig of fresh Rosemary
handful of your favorite Mushrooms ( I used portobello)
1 cup whole wheat Couscous, cooked

Saute the onions, garlic, and mushrooms for about 5-7 minutes. Next add in the tomatoes and rosemary, let it cook down another 5 minutes. Pour in the chicken stock and nestle in the chicken breasts. Cover and cook on medium-low heat until the chicken is done. Plate the chicken with some of the tomato and onion mixture. Stir in the couscous to the rest of the tomato and onion mixture. I set my chicken on top of the couscous when serving. You can put it on the side too that's fine. Enjoy!
