Chicken Salad



For all you healthy conscience people out there, this one is great for you. No carbs, little calories, tons of flavor. What's not to love!?!

Iceburg or Romaine lettuce for the "lettuce cups"
I used red seedless grapes, a handful
1 boneless skinless chicken breast, cubed ( I boiled it in fat free chicken stock with a bay leaf)
Handful of Almonds
1 stalk of Celery, chopped
A few fresh Sage leaves, chopped
Red Onions, chopped (optional)
2 Tablespoons of Fat Free Ranch Dressing.

Chop the grapes in half, chop the almonds if they aren't slivered already, chop the celery and red onion if using. Once the chicken is cooked, let it cool for about five minutes. Add all the ingredients into a bowl. Mix in the dressing and pop in the fridge for at least thirty minutes. Once chilled, spoon into lettuce cups and enjoy! Super easy, really quick and so good for you.
