Fall Vegetable Egg White Scramble



I feel like I've been eating horribly lately, so I wanted something healthy for breakfast. Which in itself is a miracle, because I don't eat breakfast like I should. How does that saying go? Practice what you preach? Yes, I know.......sigh.

Anyway this is super rich in protein and oober healthy for you. All KINDS of healthy nutritious things going on in here. Feel free to add a tablespoon of cheese, and wrap it up in a whole wheat tortilla. Best part is you can use whatever vegetables you have on hand, as little or as much as you want. The possibilities are endless.

3 egg whites
2 tablespoons red bell pepper
1/4 cup onion, chopped
Grated Zucchini
s/p to taste
1 large fresh Basil Leaf
Handful of fresh Spinach, chopped


Saute the vegetables with a little salt and pepper until nice and tender. Scramble in the egg whites and stir around until they are nice and white and no longer runny. Top on some fresh basil and serve with fresh fruit or whole wheat toast. Have fun with this and enjoy!
