Macaroni, Sausage & Cannellini Beans
One of my absolute favorite comfort meals! This can be made many different ways. Again it all depends on what you have on hands and what you love the most. Very Italian and if you omitted the sausage for maybe chicken, very healthy!
1 package of Sausage links
1 can Cannellini Beans
1/2 box of Macaroni ( orichiette (hats), farfelle (bow ties), shells, any small-medium size macaroni will do)
2-3 cups of fresh Spinach, chopped
1 small onion, chopped
3 cloves garlic, chopped'
s/p to taste
crushed Red Pepper (optional)
Pecorino Romano Cheese
Bring a pot of boiling low fat, low sodium chicken stock to a boil and cook macaroni as directed. Reserve about 1 cup of the chicken stock.
Saute the onions and garlic in a pan. Add in the salt/pepper and crushed red pepper. Mix in the sliced sausage and stir occasionally until cooked through. Stir in the spinach and the beans and cook down until the spinach is wilted. Add in a couple ladles of chicken stock to help loosen up. Add in any desired amount, the choice here is yours. I used about 1 cup. Top with fresh grated cheese and serve. Enjoy!
