Healthy Cranberry-Banana Muffins



I had two very ripe bananas and a bag of fresh cranberries starring at me this morning. First thought was to make banana bread and do something different with the cranberries. Then thought eh what the heck let's mix them together. They are great for my son to take to school for snack time! I also had whole wheat flour on hand that I don't use very often, so I decided to put it to use! The cranberries make these a little tart.  However they are really good for you.

Ingredients:

1 1/4 cup sugar
1 cup all-purpose flour
1 cup whole-wheat flour
1 teaspoon baking soda
couple pinches of salt
1 teaspoon almond extract
2/3 cup non-fat milk
2/3 cup non-fat yogurt or sour cream
2 very ripe bananas 
2 large eggs
1 cup fresh cranberries

Preheat oven to 350

In a bowl mix together sugar, flour, baking soda and salt. In a separate bowl mix together the extract, milk, bananas, yogurt and eggs. Slowly incorporate wet ingredients with the dry. Mix in the cranberries, and pour into prepared, lined muffin tins. Fill about 3/4 of the way up and bake for 20 minutes. Let cool for about 10 minutes, and enjoy!
