Apple-Zucchini Bread






Ingredients:

1 zucchini, grated
1-2 green apples, grated
1 1/4 cup light brown sugar
1/2 cup canola oil
1/2 cup light & fit dannon yogurt (any  low-fat yogurt will do)
3 eggs
1 teaspoon almond extract (you can use vanilla)
1 1/2 cup all purpose flour
1 1/2 cup whole wheat flour
1/4 teaspoon salt
1 1/2 teaspoon baking soda
1 1/2 teaspoon baking powder
1 teaspoon cinnamon
1 teaspoon nutmeg
1 cup Walnuts (optional, I didn't use any, or dark chocolate chips)


Preheat oven to 375
Coat 2 bread pans with nonstick cooking spray.


Pour in the zucchini, apple, brown sugar, oil, yogurt, eggs and almond extract in a large bowl and stir. Add 3 cups flour, salt, baking powder, baking soda, cinnamon and nutmeg to the bowl and mix. If using, mix in the nuts and a 1/2 teaspoon of flour to coat and prevent them from sinking. Carefully stir in the nuts and the extract.
Pour the batter between 2 loaf pans. Bake until a toothpick or skewer inserted in the middle of each loaf comes out clean, about 50 minutes. Remove the bread from the pans and cool on a wire rack.Enjoy!

Not too shabby for that waist line either! 



Notes* You can finely chop the apples if you want a little texture. You can change up the yogurt for no sugar added applesauce. If you don't want to use a yogurt/oil combo you can just use 1 cup canola oil, or just 1 cup yogurt.
Also, if you have never used yogurt, keep in mind that it will slightly change the consistency of the bread.
