LIghtened Up Broccoli & Red Pepper Quiche




5 Eggs
1 Head Broccoli, chopped
1 Red Pepper, chopped
1 small yellow/red onion, chopped
2 cloves garlic, chopped
Fresh Parsley
3/4 cup light cream (heavy cream can be used as well)
1  cup part skim cheese of your choice, I suggest Cheddar/Monterrey Jack (whole milk cheese is fine)

Pie Crust of your choice. I would give you a recipe, but I'm honestly horrible at baking pie crust. I made a whole wheat one I snagged from the Internet. I found out the hard way I'm not a fan of whole wheat crust by any stretch of the imagination!

Preheat oven to 375

Saute the salt/pepper, onion, garlic, pepper and broccoli in a skillet until tender. Let cool about five minutes. Mix with the cheese and pour into the pie crust. Whisk the eggs and cream together, with s/p.  Pour the mixture over the vegetables and bake for about 30-40  minutes or until the center has set. If the pie crust starts to brown too much, cover it with foil for the remainder of the time in the oven. Enjoy!

Now keep in mind whole wheat pie crust tends to be on the dry side.
