Tortellini Soup
The great thing about soups, stews and these one pot wonders is that you can add a little of this, and a little of that! Use whatever you have on hand. These to me can sometimes be the very best meals. It allows you to be creative and add in whatever you'd like really.
1 bag tortellini
5-6 cups low sodium fat free chicken stock
2 carrots, chopped
2 stalks of celery, chopped
1 sprig fresh rosemary
2 sprigs fresh thyme
s/p to taste
crushed red pepper (as much or as little if desired)
2 bay leaves
3 cloves garlic, chopped (use as much or as little as you'd like)
1 yellow onion, chopped (any onion will do)
1 can of ceci peas a.k.a. chick peas (if desired)
1-2 cups of prepared marinara
In a large stock pot heat up a little olive oil. Once the olive oil is heated add in the onions, garlic, carrots and celery. A little salt & pepper to season and cook until nice and tender. A good ten minutes or so. Now add in the garbanzo beans if using, the thyme, rosemary, bay leaves and crushed red pepper. Pour in the chicken stock. If there isn't enough add more. Bring to a boil and then let simmer at least 30 minutes. Next stir in the marinara and macaroni and let cook another ten minutes or until the macaroni is finished. Serve with some nice crusty bread, a little grated cheese (pecorino romano) and as always, enjoy!
