Low-Fat Orange Muffins w/Orange Glaze







2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup plain yogurt ( I used Dannon light and fit)
1/2 cup low-fat milk ( I used one percent)
2 eggs
1/2 cup sugar
2 tablespoons grated orange zest
1/2 cup fresh squeezed orange juice


For the Glaze:
1 cup confectioner sugar
2 tablespoons fresh squeezed orange juice
1 tablespoon orange zest

Preheat oven to 350

In a large mixing bowl, sift together the flour, baking powder/soda, and salt. In a separate bowl combine together the yogurt, milk, eggs, sugar, orange zest and orange juice. 
Stir the wet ingredients into the dry until mixed well and there are no lumps. 
In a non stick muffin pan pour each muffin hole half way up with batter. Bake for 15 minutes or until a toothpick comes out clean. Let cool completely on a wire rack.  

Mix together the sugar, orange juice and zest until all lumps are taken out. Dunk each muffin top into the glaze and set aside to dry. Then eat and enjoy!  
These are very airy, light and really moist. No butter!
