Potato Skins



Here is another easy appetizer for you. Sure to please a crowd of adults and children. The fun part is that you get to top it off with anything you'd like. Great for Super Bowls, or those Sunday get togethers.


Potatoes (I used red potatoes)

Toppings such as: Cheddar Cheese, Sour Cream, Bacon, those are the big three that are most common


Preheat oven to 400

Bake the clean dry potatoes for about 40-60 minutes. Cooking time depends on what size the potatoes are and how many you have. I baked four and it took not quite an hour. You want them soft to touch. Let them cool until easy enough to handle. Cut once in half. Scoop out the potato filling and save for a later time. You don't want to scoop too much out or the skins will rip and you'll have a mess. If you look at the picture shown above you want to leave a thin line of potato all around. It will also help stand up to whatever heavy fillings you may choose to use. Once the potato is all scooped out. Lay them skin side up on a baking sheet. Using melted butter or olive oil brush the insides and tops of each one. Bake for another 8-10 minutes on each side, until golden brown and the skin is crisp. If using cheese, use right way, sprinkle it on in there so it becomes nice and melted. Scoop on some sour cream and top with pieces of bacon. Enjoy!!
