This is about 240 calories. Great for just one person. I know that can sometimes be very difficult. Elegant and flavorful enough for a party or small get together for brunch.
2 eggs
1 teaspoon/tbls onion, chopped
1 clove of garlic, minced
1 mini baby bell pepper, chopped
handful of fresh kale
1 slice of fat free turkey
fresh rosemary
1 tbls mozzarella cheese
Mix well all together. Pour in prepared single serving dish, or ramekin. Bake at 350 for about 20 minutes or until set. Enjoy!
