Chicken & Udon Soup







1 Rotisserie Chicken, Shredded
4-5 quart chicken stock ( I made homemade, recipes on blog)
Spicy Sesame Oil
3 Carrots
3 cloves Garlic
Scallion/Cilantro to Garnish
1 package Udon Noodle (dried)
2 stalks celery
1 tbsp minced fresh ginger


Saute the carrots, garlic, celery and ginger until soft. Pour in the chicken stock and shredded rotisserie chicken. Bring to a boil, lower heat to a simmer and let it go for 30 minutes. You want to cook the Udon noodles separately to prevent turning into mush. Only cook enough noodles to serve immediately with the soup. Garnish with cilantro, or scallion. I also added a few drops of Spicy Sesame Oil before serving.

Other variations: you can add in mushrooms & or cabbage in here as well. If you use cabbage with carrots, omit adding more.
