8 ounces penne macaroni, or tubular macaroni
1 medium onion, chopped
2-3 cloves garlic
crushed red pepper (optional)
1 pound broccoli, chopped
1 cup fresh Ricotta Cheese, drained
2 tablespoons milk ( I had 1% on hand)
zest of 1 lemon
1/3 cup fresh basil, chopped
salt/pepper ( I use sea salt & fresh cracked black pepper)
Cook the macaroni according to the box. Remember to add in some salt. In a large pan heat some oil, add in the onion and garlic, season with salt and cook for about 3 minutes. Add in the crushed red pepper if using and broccoli, cook for another 8 minutes or until broccoli is nice and tender.
In a large bowl mix together the ricotta, lemon zest, milk and basil. Season with salt and pepper to taste.
Mix in the macaroni and broccoli mixture and toss well. Enjoy!
