Broiled Pepper & Tomato Soup



This is the easiest soup you will ever make in your life. The fun thing about it is you can use almost any vegetable you'd like. Have fun w/it and play around with the different veggies you have on hand.

1 red bell pepper, seeds and stem removed
handful grape tomatoes
1/2 onion, peeled and keeping as whole as you can
1 clove garlic, peeled and keeping whole
salt/pepper/olive oil
In a bowl combine all veggies, sprinkle on the seasonings, drizzle with oil.
Preheat your broiler to high and do about 5-6 minutes on each side until lightly charred.
Pour everything into a blender and puree. You may add a little milk or broth to help loosen it up a bit (completely optional) I blended mine with some fresh basil, you may use whatever herbs you like.

Any tomatoes will be great this way, same with peppers, eggplant, whatever kind of onion. This made one nice bowl, so keep that in mind if making for a family.
