Veggie Burgers


Ok so processed veggie burgers are well.....crap! You find those in the grocery store. I'm not a fan of the veggie burger recipes I've come in contact with. They generally always have chickpeas or beans of some sort. I wanted something different, so I created just that. I hope you enjoy

1 baby sweet potato skin on, grated
1 zucchini skin on, grated
1/2 onion, chopped finely
1/2 large red pepper, chopped finely
3 cloves garlic, minced
1 egg white
2/3 cup plain bread crumbs, can even make your own
I used cumin, chili powder, oregano, sea salt & crushed red pepper to season my burgers. Have fun with this and use what you have on hand, or enjoy.

These made four patties at 75 calories per burger.

I molded them into the burger, popped them on a cookie sheet and in the fridge for 1 hour. I then brushed a pan with extra virgin olive oil and cooked them on both sides until nice and crisp. Serve with 2 cups mixed greens, a teaspoon of extra virgin olive oil, a squirt or 3 or lime juice and you have a nice salad at 200 calories. Add some fruit or a shake and you have a full meal.
