Bacon Ranch Chicken Salad


I made this using left over rotisserie chicken, however any left over chicken will do. You just either need to cube it into small pieces, or shred it if you can.


Left over Chicken
Ranch Dressing
Bacon, cooked and crumbled
Celery, chopped
Red Onion, chopped
Salt & Pepper to taste 
Croissant 
Green Leaf lettuce


It's just that simple. Mix everything together. I can't really give you measurements here because it depends on how much chicken you have. Use your best judgement here. If you really like celery add more. If you aren't fond of red onion use yellow. Spoon it onto a croissant with green leaf lettuce and enjoy.

If you want an Italian spin to it, use Italian dressing instead of ranch. Add olives and tomatoes maybe. Have fun with this!
