Kale, White Bean & Sausage Soup
I thought 50 degree weather and sunshine was coming?!? I guess not! What a great excuse to make a big pot of soup! Wind is insane out there today. This is a great comfort meal! You can make it without the sausage and it tastes just as great. Tons of protein, vitamins and minerals in kale! That's just an added bonus.
1 bunch of kale
2 cloves of garlic
1 small yellow onion
red pepper flakes
1 can white beans, rinsed
6 Cups Chicken Stock, preferably homemade if not low-sodium
2 bay leaves
1 cheese rind, I used pecorino romano, you can use parmesan (I don't throw anything away)
Sausage, I didn't measure (oops) it was about the size from my wrist to my elbow...that helps, right?! ha!
Heat up some olive oil in a big stock pot. Cook the sausage removing the casings, breaking up into pieces as you go. Once the sausage is cooked, remove it with a slotted spoon, place on a plate and set aside. Reserving the sausage drippings in the pot. For you non meat lovers you can skip the sausage.
You can also use carrots if you'd like. Now add in the onion, and hot pepper flakes (optional). Saute about five minutes. Now add in the garlic and cook another couple minutes until fragrant. Add in the cheese rind, 2 bay leaves, chicken stock, kale and sausage. Bring to a boil, then reduce heat to a simmer and cook for 15 minutes or until the kale is nice and tender. Place the rinsed beans in the soup the last five minutes of cooking. If you feel you need more liquid just add in a cup of water at a time. Discard the bay leaves and cheese rind.
Serve immediately, fresh grated cheese and good olive oil on top. Some nice crusty bread on the side and you are all set. Enjoy!!!
