1 can chickpeas, drained
1 can olives of your choice, drained
3 roma tomatoes, or a handful of cherry tomatoes, seeded and chopped roughly
1 large cucumber, seeded and chopped into cubes, I like to keep some of the skin on you don't have to
1 red onion, chopped
1 clove of garlic
handful fresh Parsley
5 large mint leaves
salt/pepper
1/4 cup olive oil
Juice of 1 lemon
Combine the chickpeas, olives, tomatoes, red onion together in a bowl. In a blender add the olive oil, lemon, salt, pepper, parsley and mint leaves. Mince the garlic really fine, pour over a little salt and smear with your knife over and over until it forms kind of a paste. Add it to the blender and puree. Taste for seasoning. Pour that over the chickpea mixture and mix really well. Store in the fridge for at least 30 minutes so the flavors can meld together. Serve and enjoy.
