Orange Yogurt Loaf Cake w/Fresh Blackberry Sauce


I think this is best cake I've made to date. With the exception of cheesecakes & chocolate cakes. My son and I were thinking man we have so much fresh fruit on hand, why don't we bake something. We played back and forth with a few ideas and this is what we came up with. Amazing if we say so ourselves!



For the cake:

1 1/2 cups Cake Flour
2 teaspoons baking powder
1/2 teaspoon salt
1 6 ounce container plain yogurt ( I used Dannon light and fit)
1 cup sugar
4 large eggs
2 teaspoons grated orange zest
1/2 cup extra virgin olive oil
Juice of two oranges

Preheat oven to 350


Mix together the flour, baking powder, and salt into 1 bowl. In another bowl, whisk together the yogurt, 1 cup sugar, the eggs, and orange zest. Slowly whisk the dry ingredients into the wet ingredients. Fold the olive oil into the batter, making sure it's all incorporated. Pour the batter into a buttered and floured  loaf pan and bake for about 30 minutes, or until a toothpick placed in the center of the cake comes out clean.

*Note: You can use lemon, or lime instead of the oranges. For the glaze, you be the judge of how much confectioner sugar to use. I started off slowly, since my berries were bitter I used almost a whole cup. 

Makes two loaf cakes

For the Glaze:

1 4 ounce container of fresh Blackberries
Zest and juice of one Orange
About 1 cup confectioner sugar

In a blender puree the blackberries. If you aren't partial to seeds, you might want to strain the mixture before the next step.
Add in the orange zest and juice and blend. As it's blending slowly pour in the confectioner sugar. a little at a time. Tasting as you go. Mix until well incorporated. 

Drizzle over the top of the cakes and devour!  Enjoy!!!
