Cake Like Banana Walnut Muffins





2 cups, plus 2 tablespoons Cake Flour
2 teaspoons baking powder
1/4 teaspoon salt
1/2 teaspoon baking soda
4 large eggs
1 1/2 sticks softened butter
3 overripe bananas
1 1/2 teaspoons vanilla extract
1 1/2 cups sugar
6 oz banana yogurt ( I used Dannon Light & Fit )
Walnuts (As much or as little as you prefer)


Preheat oven to 350

In a large bowl sift together, flour, baking powder, salt and baking soda. Set aside. In another large bowl beat together the sugar and butter. Bean in the vanilla, eggs and yogurt. Mash in the bananas. Slowly incorporate the dry ingredients with the wet until mixed together. Stir in the walnuts and pour into prepared muffin tins. Bake for 25 minutes or until light golden brown on top and a toothpick comes out clean. Enjoy!!
