Red Raspberry & Pear Phyllo Tart
What a nice little treat mid afternoon! Had some tea and I was set.
8 Phyllo Sheets
Melted Butter, Pastry Brush
1 Very Ripe Pear
Red Raspberry Preserves
Zest of 1/2 Lemon
Zest of 1/2 Orange
Couple Tablespoons of Sugar
Preheat oven to 350
Butter a cookie tray. Lay one sheet of Phyllo dough at a time. Brush on butter making sure to get the corners good. Repeat this step using at least 8 sheets. Bake for ten minutes.
In the meantime mix together 1-2 tablespoons of sugar (depending on your own personal taste), orange and lemon zest. Nuke the red raspberry preserves for about 30 seconds in the microwave. Spread over the Phyllo dough evenly. Then place very thin slices of the pear down until covered. Sprinkle over the sugar & zest mix. Kick the oven up to 400 & bake another 10 minutes. Let cool a couple of minutes, cut and enjoy!
So easy and light!
