Who remembers having Green Bean & Potato Salad as a kid? More traditional in Italian-American homes then anything. If you are a mayonnaise hater like I am, you will love this one! It has a nice tang to it from the Red Wine Vinegar.
Italian Green Bean & Potato Salad:
4 Large Red Potatoes, skin on (you can use baby potatoes just increase the amount)
1-1/2 pounds of fresh Green Beans
2 cloves of garlic, grated
1/2 red onion, diced
3 tablespoons red wine vinegar
s/p to taste
Zest & juice of 1 Lemon
4 tablespoons of extra virgin olive oil
Boil a large pot of salted water. Add in the potatoes and cook for 15 minutes or until almost fork tender. Add the green beans during the last five minutes of cooking time. Drain the potatoes and green beans in a bowl. Let cook a couple of minutes, then cute the potatoes in cubes.
For the Dressing:
Whisk together the garlic, onion, vinegar, lemon juice & zest, salt & pepper. Slowly add in the olive oil constantly whisking until mixed together. Drizzle over the potatoes and green beans. Very carefully not to break the potatoes, mix all together & serve.
Some variations I've noticed are white wine vinegar instead of red. Also, pancetta or bacon.
