Stuffed Peppers w/Ground Beef, Spinach & Quinoa




4 Large Bell Peppers
1 Pounds Ground Beef
3 Cloves Garlic, minced
1 Red Onion, chopped
about 1-2 cups Quinoa, cooked
Mozarella
Pecorino Romano
s/p to taste
2 eggs, beaten
Fresh Basil
Crushed Red Pepper
1 bag of Spinach 

Preheat oven to 350

Saute' the onions, crushed red pepper and garlic in a pan, add in the beef and break it up as it cooks. Once completely browned, add in the spinach until wilted. Set aside and let cool. Once it's cooled add in s/p to taste, fresh basil, pecorino romano and mozzarella. Give it a taste, add more seasoning if needed. Then add in the eggs and mix well. Spoon mixture into each pepper, top with mozzarella and bake for 1 hour. Or until the pepper is nice and soft and the cheese is nice and golden brown. Enjoy!
