Curtido (Green Cabbage)
Curdito is typically served with Papusa. It's a Central American Dish. El Salvadoran to be more specific. The Papusa recipe is already up on the blog. Check it out!
Curdito:
1 pound of shredded green cabbage and carrot blend.
s/p to taste
1 teaspoon oregano
1 teaspoon cayenne pepper (more or less depending on how spicy you like things)
2 tablespoons olive oil
2 tablespoons red wine vinegar.
Pour the cabbage into a large bowl. In another bowl whisk together the vinegar, olive oil, s/p, cayenne pepper and oregano. Drizzle over the cabbage and toss really well. Once it's all mixed in, wrap it with plastic wrap and pop it in the fridge for at LEAST one hour before serving. Enjoy!!
