Granola Bars
Granola bars are great for kids or adults. I like to take them to work with me to snack on. My son does as well. The part I really like is you can use the broken up bits in cereal, or for an ice cream or yogurt topping. You can crush these instead of eating them as a granola bar too.
I had a little help from Ina Garten on this one. I added what I enjoyed and omitted what I don't.
2 cups rolled oats
1 cup coconut
1 cup almonds
1 cup sunflower seeds
1 cup Dates
2/3 cup honey
1/4 cup brown sugar
1/4 teaspoon salt
1 teaspoon vanilla
3 tablespoons butter

Preheat oven to 350
Pour the coconut, oats, and nuts onto a cookie sheet. Bake about 10-12 minutes, stirring half way through. Let cool
In a saucepan add the vanilla, brown sugar, butter, honey, and salt. Stir until it comes to a boil and incorporated.
Stir the dates into the or whatever dried fruit you enjoy into the oatmeal mixture. Pour the honey mixture on. Stir really well until everything is nice and moist.
Spread onto a foil lined 8 x 12 baking dish. Spread the top evenly. Bake about 20 minutes. Let cool ten minutes in the pan. Then remove the granola from the pan by lifting it out by the foil. Let sit another good hour or so. Peel the foil off, and cut into square.
