10 slices of sandwich bread
3 six to 8 ounce Salmon filets (break apart with fork)
3 large eggs, beaten
1 red onion, chopped (or about 8 scallions, I prefer the red onion myself)
1/2 cup fresh Parsley or Cilantro
s/p for taste
In a blender/food processor, crumb the bread. Add the crumbs to a large bowl, along with the flaked salmon, chopped scallion, fresh herbs, salt and pepper, and beaten eggs. Mix together well with a spoon. Form into cakes.
In a large frying pan, heat enough olive oil to coat the bottom of the pan. Add the Salmon cakes and cook about 5 minutes on each side. Serve and enjoy!
