Roasted Potato & Pepper Salad



I could eat potatoes and peppers all day long. Add in some sausage and eggs and I have a fabulous meal, or sandwich. I thought this would be a nice addition to my bbq meal I served yesterday.


4 red skinned potatoes, cubed w/skin on
2 green bell peppers, chopped into bite size pieces
handful chopped fresh, Parsley
3 tablespoons Red Wine Vinegar
salt/pepper to taste
olive oil

Preheat oven to 450

Mix together, potatoes, peppers (you can use whatever color you like), olive oil, salt and pepper. Toss well. Lay out on a cookie sheet and bake for 25 minutes. Turning once about half way baking time. Let cool about 10 minutes. Whisk together Red Wine Vinegar & Fresh Parsley and drizzle over top, toss and serve.
