Mexican inspired Pork loin


Guess who finally figured out how to use he Kindle to type recipes and upload pictures! Thank you so much  for your patience! I definitely miss my computer this takes forever!


5 pound pork loin
1/4 cup salt
1/2 cup red wine vinegar
handful fresh thyme
4 tbsp smoked paprika
4 tsp dry mustard
4 tsp cumin
1/4 cup sugar
2 tsp black pepper
4 tbsp olive oil

Mix all ingredients together. Pour over the pork in a glass baking dish.  Marinate in fridge for at least 1 hour.
Take the meat out of the fridge and let it sit for 30 minutes
Preheat oven to 375

Roast for 1 1/2 hours  or until the thickest part reads 155. Let rest ten minutes before slicing.
