1 pound white meat ground turkey
1 onion, chopped
3 cloves garlic, minced
handful fresh basil
3 teaspoon sesame oil
1 teaspoon seasoned sushi vinegar
Juice of 2 limes
1 red bell pepper, chopped
crushed red pepper (optional)
handful of peanuts (optional)
1 large portobello mushroom top, chopped
Saute' the onions, garlic and crushed red pepper if using until the onions are nice and soft. Add in the bell pepper and mushrooms. Saute' another 5 minutes or so. Completely optional when you add in the peanuts. Add in the ground turkey and cook until done and no longer pink. In a bowl whisk together the sesame oil, lime juice, sushi vinegar and basil. Pour the sauce over the ground turkey mixture and stir well. Taste for salt and pepper. Fill lettuce and enjoy as a lettuce cup! I used Boston Lettuce, you can use bib or romaine lettuce as well. Even cabbage would work great with this dish.
