Blackberry-Banana Yogurt Coffee Cake w/Lime Glaze
I had some left over blackberries on hand and a really ripe banana. I decided to make coffee cake! I think by far this is the best one I've made yet with just a few left overs laying around. Enjoy!
1 pint blackberries
1 really ripe banana
1 1/4 cup cake flour
1 cup all purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 large eggs
1 6oz. container of Lime yogurt (you can use vanilla)
1 cup butter, softened
1 1/4 cup sugar
1 1/2 cup of powdered sugar
1 lime
handful of almonds (optional)
Preheat oven to 350
I used a 9 x13 cake pan.
In a bowl mix the flour, baking powder, baking soda, and salt. In another bowl beat together sugar, butter, eggs and yogurt. Beat in the flour mixture into the wet ingredients.
Spread half the batter onto the pan. Spread out blackberries on top. Slice the banana and lay those on as well. Spoon on the rest of the batter. Using a spatula smooth out the top to try to cover most of the fruit. If it doesn't, it's ok, it will all fill out nicely in the oven.
Bake for about 25 minutes or until a toothpick comes out clean. Set aside to cool.
In the meantime whisk together powdered sugar, zest and juice of the lime until all the lumps are out. Drizzle over top of the coffee cake and sprinkle on nuts if you are using them. Enjoy!!
