8 ounces of salmon
3 pieces of whole wheat bread, crumbed
1/4 red bell pepper, chopped
1 carrot, chopped
1/4 red onion, chopped
1 celery stalk, chopped
2 large eggs
salt & pepper to taste
1/2 cup fresh herbs of your choices, parsley, cilantro etc.
Mix all the ingredients together. Form into 5 patty's. I used Pam Olive Oil Spray for less calories. One patty is 121 calories.
Green Bean Salad:
3/4 cup fresh green beans, boiled
1 tablespoon almonds
1 tomato, seeded, chopped
salt & pepper
A squeeze of lemon juice
Toss all together and serve.
