This is a super easy and refreshing salad for summertime. I could eat this alone just for lunch or dinner!
1 cucumber, chopped
2-3 Roma Tomatoes, seeded and diced
1 can olives, (any kind, optional)
1/2 red onion, chopped
1-2 cloves garlic, minced
For the Dressing:
1/2 cup extra virgin olive oil
1/2 cup red wine vinegar
Salt & Pepper to taste
3/4 teaspoon Dijon Mustard (optional)
Fresh Basil would go great in this, about 8 leaves, chopped
